Spinach Salad

Last night my husband came home and wasn't feeling well so I made him chicken noodle soup- I'm not a huge fan becuase it has a TON of sodium, so I made myself a spinach salad. It was VERY yummy. If you don't really like regular Oil and Vinegar, you've got to try champagne vinegar, it's a little bit sweeter and 0 that's right, 0 calories! So the whole salad (which was HUGE) was only like 200 calories. 2 cups of spinach is only 20 calories! mmm

I'm a bit tired this AM. I couldn't get to sleep last night :( Watching the Yankees lose was a bit difficult for me to sleep on I guess! I took my Healthy Trim with my 25 calorie OJ and out the door I went. I'm still dragging a little bit this AM, I might take the other Healthy Trim a little early because I need my energy to go up.

Yummy Dinner Last Night

So yesterday I got me 3 new bottles of Healthy Trim in the mail. One thing I really love is that it ships so quickly. I ordered Friday it was in my mailbox on Monday! How fantastic, right?

Well anyway- yesterday I had one of those healthy choice frozen meals for lunch. It was great. It was chicken parm with a little bit of pasta, broccoli and an apple crisp type dessert :) It was only 350 calories and it made me feel full - I think a lot of dieting is in your head and the mind games you play with yourself. Like I had a complete meal so I must be full, even if it was only 350 calories :) I'm going to try a different food combo next week- I'll report back...

As for dinner last night- ugh it was so good! It was bbq casserole. Instead of using ground beef we used ground turkey again. For only 450 calories, it was a palate pleaser!

Here's the recipe (it makes 6 portions):
Brown 1lb of ground turkey and 1 diced onion.
in separate pan, cook 10 ounces of pasta
Drain the pasta, add the turkey/onion mixture
add 1 cup of bbq sauce
add 1/4 cup parsley
add 1 cup shredded mozzarella (I used part skim to cut out some more calories)
top with 1 cup low fat shredded cheddar
Put it in the oven in a greased casserole dish for 20 or so minutes at 350.

I'll be back today with more :) I'm going to a restaurant where I love a sandwich that is probably 1500 calories... wish me luck- I don't want to order it, but I know how good it is.

Monday Report

This weekend was very busy- so I was on my feet a lot, running around, lifting things, running, and basically on Saturday I sat down for 10 minutes at a time every 3 or so hours. I took Healthy Trim in the AM and was immediately energized- which was great! I needed it to pull this weekend off. I had a really healthy lunch- apple, yogurt and a 100 calorie pack (the fudge dipped cookies :) Yum! I took another one before lunch and then just had 1/2 a chicken breast, some asparagus and avoided the cake. Yay for making healthy decisions! Normally by the end of events I feel like I'm falling asleep driving home- not the case here, which was helpful!

Sunday was another good day. I had one when I woke up- had a Sargento Cheese stick (80 Calories) and some canteloupe. I avoided the Samoas which are my all time favorite cookie and I worked out my food plan for the week. We've gotten in the habit of planning out a week's worth of menus so that we don't have to run to the grocery store in the middle of the week- it's saved us about $75 a month in our grocery bill!

For dinner we had a mexican fiesta casserole: 350 calories for a good sized portion.
-Sautee 1lb ground turkey with 1 yellow onion
-Add 1 can chili beans to the pan (without straining)
-Put that at the bottom of the casserole top with 3/4 cup sour cream
- sprinkle with tomato, and low fat cheddar
-bake for 20-30 minutes
Makes 4 servings!

I also had a 100 calorie Klondike bar :) and a glass of milk.

I am doing this round with a friend from work- more accountability! Do you pair up with someone? We just did the buy 2 bottles get one free- so we each got 1/2 a bottle free with buying 1 bottle! Woo hoo!

I've been lost...

So first time around I was doing well, and then I failed. The stresses of life got to me, and I didn't want to be on a diet- I wanted comfort food. Yum cookies! Well, I'm back :) And I'm making a vow that I will post at least once a day! But I need your help as well. Share recipes with me. Share succes stories. Share what you're struggling with.

I will keep you all posted. Weigh in days are Fridays and I'm starting again tomorrow. I just took advantage of their buy 2 get 1 bottle free offers.

Wonderful (LOW CALORIE) Dinner Last night

Just thought I would share with you all a recipe that I got out of our George Forman Cookbook. It was FANTASTIC- so much flavor :)

Pineapple Honey Chicken Breasts:

1/4 c. Low Sodium Soy Sauce
1t. Ginger
1t. Vegetable Oil (I used EVOO)
1 Clove Garlic
2 T. Honey
4 Boneless, Skinless Chicken Breast Halves
4 Fresh Pineapple Slice (or canned)

Mix the soy sauce, ginger, EVOO, garlif and honey. Put the chicken on the grill and spoon sauce over each piece. Allow to grill for 3 minutes (or 4 if you don't cut it in 1/2) flip and get some sauce on the other side. Grill for 3-4 minutes. Then place the pineapple on the chicken and grill for 3-4 more minutes until the Chicken in cooked all the way through. SUPER YUMMY!

Trick I learned with this recipe: Cut Chicken breasts to 1/2 thickness- doubles the amount you've got and lowers the calories if you only have one- we saved our second half for lunch today!

As a side, we had lemon garlic grilled zucchini- Super easy. Zucchini, olive oil, lemon juice, garlic (minced), pepper and salt! Only needs to grill or sautee for 4-5 minutes.

Did I mention the whole meal, which was very filling, for both my husband and myself was only 300 calories?

Superbowl Sunday

Well, It was as difficult as I imagined! There was so much food (all cooked by me, so I tasted along the way) But I actually ate a big healthy lunch so I didn't have much room for the not so healthy stuff. I may need to do this more often. That way I don't have room for the unhealthy stuff :)

I'm not a huge fan of nuts- but I love some of the other items on the list! Like sweet potatoes...mmmm I'm getting dinner ideas.
