Just thought I would share with you all a recipe that I got out of our George Forman Cookbook. It was FANTASTIC- so much flavor :)
Pineapple Honey Chicken Breasts:
1/4 c. Low Sodium Soy Sauce
1t. Ginger
1t. Vegetable Oil (I used EVOO)
1 Clove Garlic
2 T. Honey
4 Boneless, Skinless Chicken Breast Halves
4 Fresh Pineapple Slice (or canned)
Mix the soy sauce, ginger, EVOO, garlif and honey. Put the chicken on the grill and spoon sauce over each piece. Allow to grill for 3 minutes (or 4 if you don't cut it in 1/2) flip and get some sauce on the other side. Grill for 3-4 minutes. Then place the pineapple on the chicken and grill for 3-4 more minutes until the Chicken in cooked all the way through. SUPER YUMMY!
Trick I learned with this recipe: Cut Chicken breasts to 1/2 thickness- doubles the amount you've got and lowers the calories if you only have one- we saved our second half for lunch today!
As a side, we had lemon garlic grilled zucchini- Super easy. Zucchini, olive oil, lemon juice, garlic (minced), pepper and salt! Only needs to grill or sautee for 4-5 minutes.
Did I mention the whole meal, which was very filling, for both my husband and myself was only 300 calories?

Food to Love:Fajita Salad
I had a really great Fajita salad today. Instead of ranch dressing (which can be really really high in calories- so be careful :) ) I mixed reduced fat sour cream with salsa. It had just enough kick with my chicken and hard boiled egg on my salad.
So what's in it:
-Romaine Lettuce
-Corn
-Black beans
-Chicken
-Hard boiled eggs
-Tomato
-Salsa/Sour Cream dressing
VERY yummy and not too many calories!
So great and refreshing!

Grapefruit
So I've been eating it in the Morning before I take my healthy trim. I've always heard that it jump starts your metabolism- anyone have any info to back that up? Also, does anyone have information on the long term effects? My father in law seems to think that it is what causes his bad heart burn now, 20 years after he ate one a day for a year. But... my father in law is a twig...
I know they're high in natural sugar, but I don't necessairly think that it's a bad thing. I also know that they're a great source of dietary fiber. Verdict is still out, but I think I'll keep the grapefruit in the current diet, unless you guys have many words of wisdom for me :)
I will say that I tried doing grapefruit juice instead of solid grape fruit. One morning I had a grapefruit and then had some juice and the juice was WAY too sweet. So I don't think I'm going to drink the juice anymore, unless I make it myself.
Here are some interesting weightloss facts linked to grapefruit.

Food To Love: Mini Peanut Butter Quaker Oats
Has anyone tried these yet? They're mini Quaker Oat Cakes and they have a sweet peanut butter drizzle on them. I had them as a snack, but they were much more like a dessert- oh and they're only 90 calories! Woo Hoo!

F2L: Betty Crocker Warm Delight Minis
I've fallen in love with Betty Crocker Warm Delight Minis. They're 150 calories, and it's delicious!
I've tried the molten chocolate cake, and it is one of my new favorites! They pack the mix and the filling in the bowl. You add a tiny bit of water, microwave and you've got a "warm delight!"

F2L: Wendy's Jr. Frosty.
Ok, so I don't think I'll ever be able to give up my love of sweets, or fast food for that matter, it's just a matter of moderation! So here's my food to love for the week.
Jr. Frosty from Wendy's. If you're in need of a chocolate fix, this is perfect. They're 150 calories, and just enough. (It's not the small, but a JR.) The small is much larger and has a lot more. It was the perfect snack sized treat and totally fixed a minor craving I was having:) Limiting my chocolate on this Healthy Trim diet hasn't been tough, but I do really miss it, so it was great to meet up with an "old friend" yesterday.
I did however promise myself that I only get it once a month, so until then it's back to healthier yogurt!

Food to Love: Southwest Chicken Salad
So I had this the other day for lunch, and I couldn't believe how great it was! Here's what I put in it:
1: Romaine Lettuce: 5 leaves-10 Calories
2: Yellow Corn: 1/4 Cup-35 Calories
3:Avocado: 1/4 Cup- 60 Calories
4:Tomato: 1/4 Cup- 5 Calories
5:Shredded Cheese: 1/8 Cup- 55 Calories
6: Chicken: 1/2 Breast, Grilled-140 Calories
7: Salsa Ranch: 3tbs-120 Calories
Woo Hoo A GREAT lunch or dinner salad for under 450 Calories! And it's totally Yummy! You can prep it by having all of the "wet ingredients in one pack- then put it all over the salad when ready- leaving the lettuce crisp when you get to it! ENJOY

F2L: Peaches are in season!
Are you looking for another fun dessert? How about a tasty alternative to that sugar and calorie full peach cobbler.
With Healthy Trim, I find that I have to select what I'm going to indulge on (and it's ok to indulge every once in a while) But when I found this recipe, I also found out that it's not indulging! Woo Hoo! So with my low cal high protien dinner, I get to enjoy this new savory dessert! And, I love peaches in anything, so that might be the best part!
Grilled Peach al a frozen yogurt
If you cut a peach in half, and brush it with vegetable oil, grill it up (on high) and it's done when fork tender. Take it off and add 1 scoop of vanilla frozen yogurt and sprinkle a little bit of coconut! YUMMY
Best Part: Under 150 calories!

Food to LOVE!
Ok, so everyone knows: Cravings are real, especially for women during that time of the month! No amount of Healthy Trim will overcome estrogen! So I make my body happy, while sticking to a low cal diet!
My current Craving Crusher: 100 Calorie Klondike Bars! They are SO yummy! One is totally enough, and they even have a toffee cruch! They're so great that I even catch my husband snackinig on them!

Food to LOVE...while you're on a diet
Healthy Trim has afforded me the opportunity to make smarter decisions with what I eat. Lunckily, thanks to Healthy Trim, I've been able to lose weight thus far, and continue to do so.
So on this week's edition of F2L, I'm sharing one of my all time favorites: Yogurt.
Reasons it's good for you:
1. Calcium: Surprisingly, you get more from yogurt than you would from a glass of milk. Ladies, this is especially important for us in the earlier years- preventing osteoperosis! Woo Hoo-
2. Potassium: I can't stand bananas, so this is a great way to keep the muscle aches away!
3. Protein: It's got just as much as scrambled eggs, but without the cholesterol
4. Bacteria: Helps with digestion and keeps things "regular" if you will.
Ways to make it yummy:
1. Add fresh fruit: I love adding peach chunks, strawberries, and at times put a little on an apple.
2. Granola: I personally don't like rasins, but you can get granola with almost any type of nuts and with or without rasins, add a fews tbs and you've got a crunchy snack.
3. Nuts: I like adding grape nuts, but I know plenty of people that also include almonds and more.
So I've got quite the sweet tooth, and usually crave something sweet after dinner. Not so much now that I'm taking the Healthy Trim, but some none the less. So I reach for a yogurt, 100calories and just enough to make me happy. There are a few fun flavors out right now and they're my new favorites: Pineapple Upside Down Cake, Orange Creamsicle, Keylime Pie, Chocolate Mouse, and more! I also love the Whipped variety that Yoplait has!
